Mini Apple Sauce Spice Muffins


Ingredients:

1/2 c. butter, softened
1 c. Splenda
1 egg, bitten
1 c. applesauce
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tbsp. ground cinnamon 
1 tsp. ground allspice
1/4 tsp. ground cloves
1 c. chopped pecans 

Directions:
Preheat over at 350 degrees.
Mix flour, Spenda, baking soda, salt, cinnamon, allspice, cloves in a bow. Add butter, egg, and apple sauce, 1 ingredient at a time and make sure to stir to get an homogeneous batter. Pour the pecan and mix well.
Put the batter in mini muffin holder and put it in the oven for 15 minutes.
Let them cool down on racks.

Yield 36 Muffins
What do I think of this recipe?
  • You can taste the spices but it not overpowering. Interestingly, the muffin does not feel moist neither dry, but a tiny something is missing to make it just moist. 
  • Great recipe for fall and winter seasons with a cup of coffee!
